when someone puts something between asterisks, it can mean one of two things.
1) Really really old school internet putting asterisks around anything meant to bold that word or phrase (this was before there was HTML and graphic interfaces. I still do this sometimes. example: "I *love* chocolate" is like saying "I love chocolate"
2) more currently something between asterisk is, like you said, what a person is doing now as opposed to saying. example: "I'm am pissy! I need a cocktail. *grabs a bottle of Jim and starts pouring* That's better!"
