    Union Wood Shop Mac 'n Cheese

    OMG!, caught DDD on the Food Network with Kid Rock, and being the lover of mac 'n cheese that I am, I tried it! With only one addition, *crack'ln (whole pork belly cubed and pan fried until krispy) like you'd use in crack'ln corn bread...It's toungue slap your brains out kinda mac n cheese. They make it in large quantity for the Wood Shop, but I broke it down to serve the small fam. Here it is for those interested;

    1 box pene pasta cooked

    1 C milk

    1/2 C heavy cream

    1 tsp. each of Sea salt and pepper

    1/2 tsp. fresh ground nutmeg

    Bring to rapid roll and begin the roux by sauteeing;

    6 tblsp of butter (more or less, your choice)

    1 diced onion

    1 1/2 tblsp of pureed garlic

    Sautee' for 4 - 6 minutes, combine with milk mixture, and then add;

    1 1/2 to 2 C parm cheese (I use Locatelli parm 'cause it's f'n awesome!)

    Now chill this mixture. Add chilled mix to pasta and pour half of it into a baking dish, I used a 9 x 13 casserole, top that with good sliced yellow cheddar, add the other half of the mac mix and top with shredded sharp white cheddar and bake 400 for 25 to 30. If the top did not brown to your liking, turn on the broiler and brown it to your liking.

    *Crack'ln ~ Add when you combine the pasta and cheese sauce together, prior to baking. Enjoy!!

Yep it is bread crumbs...I think about a 1/2 cup, like I said I've been trying to tweak the top layer each time I make it trying to get it right. I one time tried melted butter mixed with the Panko, but it turned out too oily. The last time I made it I layered the Panko on then the white shredded cheddar last & baked at 425 for about 20min or until bubbly then I put it under the broiler for a few minutes to brown it up. The top layer was almost right, but I think what it needs is more than the 8 oz. white cheddar that I've been using...so next time more cheese. Let me know how it turns out :)

Margo how much panko do you use with one recipe? Panko is like bread crumbs if I read right. I think it may need alittle butter mixed with it to brown and crisp up. Thanks jeeper

Yes it do. I watched the video too & caught the Panko topping. I made this for a crowd recently & they all loved it! I am having a hard time trying to get the topping just like The Woodshop one though, I've been switching up the ratio of Panko to shredded cheese, it's just not the same...

Thanks Margo C. It makes a difference in what you end up with. Just like the flour thing. But I think I got it now. Watched the video and cought the panko for the crispy topping. Did the mac for fathers day he loved the mac. thanks jeeper

When I make this I use the shredded Parmesan.

I NEED TO KNOW IS THE 1 1/2 to 2 C parm cheese. Is the Parm Cheese Finely Shredded or Grated Thanks jeeper

Ah, the power of cheese!! I would love a heaping bowl of this mac n cheese right about now!! I'm still dreaming of the delicious blue cheese mac n cheese I had earlier this year. It doesn't take much to make me happy. ; ) Thanks for the recipe K8!!

I left the flour out for the roux....after onions are sweated, add 1 1/2 tblsp of flour and stir in.
